We are seeking a highly motivated postdoctoral fellow for a 3-year research position at the University of Copenhagen in the MYCOFLAVOR consortium. The objective of the position is to lead the analytical flavor chemistry for creation of novel flavorful products via fermentation of food side-stream.

The roles will be dedicated to

  1. Development of analytical chemistry methods for quantification of aroma compounds for the PTR-MS platform.
  2. Perform analytical chemistry analysis of the samples in the project through PTR-MS, GC-MS, GC-O, and LC-MS techniques.
  3. Collaborate with the Sensory Group at the Section of Food Design and Consumer Behavior to conduct sensory analysis for samples in the project.
  4. Engage in the MYCOFLAVOR consortium through interdisciplinary interactions and actively collaborate with project partners.

The postdoctoral fellow will actively contribute to and present research at progress and consortium meetings, in addition to regular research group meetings and bi-weekly flavor chemistry group meetings.

Our group and research- and what do we offer?

The MYCOFLAVOR consortium includes five partners, consisting of three universities, two commercial partners, and one external participant. The project is supported by the AgriFoodTure partnership of companies and universities that seek to accelerate the green transition of Denmark (https://agrifoodture.com/).

The selected postdoctoral fellow will be a part of the Sensory Science and Consumer Behavior group in the Section of Food Design and Consumer Behavior. Our research facilities include modern sensory and flavor chemistry laboratories, which are part of the Future Consumer Lab (https://futureconsumerlab.ku.dk/).

Currently, the section hosts 17 PhD students and 7 postdocs, offering an ambitious, open, supportive, and collaborative environment. Our research group covers topics ranging from chemometrics, flavor chemistry of food products, and sensory impact to the influence of external factors on the senses. As a member of the section and our research group, you will have the opportunity to participate in an international and social work environment, engaging in research discussions relevant to the field.

The group is a part of the Department of Food Science, Faculty of SCIENCE, University of Copenhagen. We are conveniently located close to the center of Copenhagen at the Frederiksberg Campus.

Your profile

The successful candidate will take initiative and responsibility, work independently, and thrive in this highly collaborative framework. We are looking for a highly motivated and enthusiastic scientist with the following competencies and experience:

Essential experience and skills:

  • You have a PhD in a topic related with analytical chemistry, and/or shown considerable achievements in the field and demonstrate a coherent career path.
  • You embrace technological challenges
  • Excellent English skills, written and spoken.
  • Good dissemination skills for internal talks, consortium meetings, and external community via conferences and publications.

Practical experience with the following techniques is favored but not a necessity:

  • Experience with running and maintaining PTR-MS equipment
  • Flavor chemistry
  • Sensory analysis, although this is secondary compared to the core skills.

Place of employment

You will be part of the Department of Food Science at the University of Copenhagen, working under the guidance of Principal Investigator Tenure-track Assistant Professor Sylvester Holt, alongside Professor Wender Bredie and Associate Professor Rene Lametsch.

Living in Copenhagen

Copenhagen is a fantastic city and a wonderful living experience, and it has consistently been ranked among the world’s best cities to live in. The Frederiksberg Campus is conveniently located close to the center of Copenhagen. The  University of Copenhagen has an International staff mobility program to help accommodate international researchers with practical matters before arrival, such as with residence permit, housing, and childcare/school, as well as during the stay with salary, tax, pension, insurance, banking as well as getting accustomed with language and culture. 

Terms of employment

The standard for weekly working hours are 37 hours per week.

The desired starting date is February 1, 2024.

The Innovation Fund Denmark is providing funding for the project through the mission-based partnership, AgriFoodTure. The initial duration of the position is 3 years.

Salary, pension and other conditions of employment are set by the Agreement between the Ministry of Taxation and AC (Danish Confederation of Professional Associations) or other relevant organization. Currently, the monthly salary starts at 36,400 DKK/approx. 4,880 EUR (October 2023)

Foreign and Danish applicants may be eligible for tax reductions if they hold a PhD degree and have not lived in Denmark for the last 10 years.
