With the current position, the Department is expanding the flavour research area by focussing on new ways of flavour formation by biochemical engineering and fermentations, e.g. in plant-based matrices and processing. Besides flavour formation pathways, the position can also open up for studying flavour-matrix interactions, e.g. molecular interactions (flavour binding and transport phenomena) in alternative protein formulations.

The Tenure-Track Assistant Professor will be part of the Section for Design and Consumer Behavior (DCB), which is among the leading scientific environments within integrated approaches to future food design, innovation, and addressing preference behavior of consumers. Although part of the DCB section, the candidate is expected to develop her/his research in close collaboration with other research groups within food microbiology, food chemistry/physics, foodomics and sensory science. The Tenure-Track Assistant Professor’s duties will primary include research and development of the field including obligations with regard to publication/scientific communication. • Analytical flavour chemistry
  • Biochemistry of flavours
  • Flavour biotechnology
  • Flavour-matrix interactions
  • A collaborative and innovative mind-set
  • International network and collaborations
