DTU wants to contribute to a more sustainable future by developing new technologies so that we can utilize our resources better. The aquatic resources – blue biomasses – has a particular high potential. If you are burning to make a difference for a more sustainable future then this research position may be a possibility for you. In the position at the National Food Institute at DTU (DTU Food) you will therefore preserve blue biomasses to decrease waste and increase utilization of fish raw material.

You will be associated with two research groups at DTU Food, Research group for Bioactives – Analysis and Application and Research group for Food Microbiology and Hygiene. The position involves close collaboration with the company Royal Greenland (Denmark and Greenland) and with other partners in our EU-project from Iceland, Norway and Malta. Your research will be multidisciplinary including food chemistry, microbiology and technology.

Responsibilities and qualifications
Your overall focus will be to strengthen the Department’s and Royal Greenland’s competences within preservation of lumpfish roe for increased safe shelf-life using mild processing. Another focus is to preserve lumpfish carcasses for increased utilization. You can expect research travels to Greenland and Malta as a part of your experimental work. You will also train project partners in analytical methods.

Your primary tasks will be to:

  • Characterize composition, oxidative status and microbiota in lumpfish roe and carcass
  • Identify new plant based antioxidants, which efficiently prevents oxidation and microbial growth in lumpfish roe and carcass
  • Evaluate preservation techniques / antioxidants in storage experiments using spectrometry and GC-MS to determine oxidative stability and microbial methods to evaluate safety and microbial stability.
  • Within the position, you will:

  • Be responsible for own research in collaboration with experienced scientists and technicians in a collaborative environment
  • Perform interdisciplinary research within the fields of lipid oxidation and microbiology
  • Collaborate with the industrial partner Royal Greenland and other project partners
  • Contribute with new knowledge in the field of preservation and increased utilization of fish biomasses for the benefit of industry and society
  • As a qualified candidate, you need to have:

  • Knowledge in the areas of lipid oxidation / antioxidants and experience with food microbiology is desirable
  • Good laboratory skills preferentially both within food chemistry and microbiology
  • Good collaboration and communication skills (written and oral English)
  • Structured and analytical work approach
  • Skills within statistical analyses of data
